Homemade (and healthier) McMuffins

As part of my healthy eating plan, I’m trying to avoid junk food and takeaways, although to be honest its not often that I eat those sort of foods anyway. One thing that I do have a weak spot for are the sausage, egg and cheese muffins from McDonalds. So seeing as I already had a pack of wholegrain english muffins in the bread bin, I thought I would have a go at making a healthier version.

Now its worth saying at this point that although my version is healthier, they will still be high in calories and should be eaten as part of a healthy balanced diet etc etc!

So here is what you will need:

  • 1 wholegrain English muffin
  • 1 egg
  • 1 slice of cheese (any kind will do!)
  • 1 slice lorne square sausage meat (from the frozen aisle)

Preheat the oven to 180 degrees and crack your egg into a ramekin and pierce the yolk with a fork. Bake the egg for 10-15 minutes.

While the egg is cooking, spray a non stick frying pan with low cal spray and fry the sausage for around 12 minutes (or as per pack instructions) turning frequently. Toast the muffin and cut in half, then layer the sausage, egg and cheese inside.

Delicious! Plus much healthier =)
