I have a major sweet tooth, which doesn’t really fit in with my plans for eating more healthily. Luckily there are a lot of cakes which taste great made with whole grain flour and this is one of them! Date and walnut cake… Its light, spongy, with a great texture. If anything I would say the whole grain flour goes better with the dates and nuts than white flour does!
Whole grain date and walnut cake
- 200g chopped dried dates
- 100g chopped walnuts
- 280g whole grain flour
- 30g unsalted butter
- 2 tsps baking powder
- 1 tsp bicarbonate soda
- 2 tsps mixed spice
- 240ml boiling water
- 140g golden caster sugar
- 2 eggs
- Pinch of salt
- Put the dates in a bowl with the butter and bicarbonate of soda. Pour over the boiling water and stir until the butter has melted. It will go a bit foamy, don’t worry that is supposed to happen! Set aside to cool.
- Heat the oven to 180ºC. Grease a round deep cake tin (I used an 8″ tin) and line the bottom with baking parchment.
- Beat the sugar and eggs in a large bowl. Add the date mixture, then sift in the flour, baking powder, mixed spice and salt. Add the walnuts and stir together until thoroughly mixed. Pour into the cake tin and cook for around an hour. My cake was done in 50 minutes so check regularly during the last 15/20 minutes of cooking. When a skewer comes out clean its ready!
This one went down well with the family, half of the cake has disappeared already! Its been a while since I’ve baked something but I’ll definitely make this again. Let me know if you try it too!
